Apple Manchego Salad

This salad is a family favourite around here! My mum makes it fairly often for big family gatherings because it’s super simple to make, looks really fancy, and tastes amazing! I always just serve mine up without the cheese :) just as tasty!

Ingredients

  • 1/3 cup pumpkin seeds
  • 1/3 cup olive oil
  • 3 tbsp sherry vinegar (or pear vinegar)
  • 1 tsp honey
  • 1tsp grainy mustard
  • 1/4 tsp each salt and pepper
  • 8 cups mixed greens
  • 1/3 lb manchego cheese, shaved thin
  • 4 apples, very thinly sliced

Directions

  1. Toast the pumpkin seeds in a pan over medium-high heat with 1 tbsp olive oil. When they’re nice and golden, season with some salt and transfer to a paper towel to cool. Really important to keep an eye on them while they’re toasting and constantly stir them – they tend to burn very easily!
  2. To make the dressing, combine the rest of the olive oil, vinegar, honey, mustard, and salt and pepper.
  3. Now to assemble the salad! In a large salad bowl, throw in your greens, apples and cheese. Top with the pumpkin seeds and drizzle on the dressing. Serve and enjoy!

Quick “Baked” Apple Cinnamon Treat

On Day 4 of my 21-day sugar detox (also known as 21DSD) I was dying.  I needed a dessert so bad.  Dinner was great but so unsatisfying.  I had already eaten my banana for the day so that ingredient was off limits…. :( While I was looking up baked apple desserts on Pinterest, I was getting hungrier and hungrier!  Of course all the recipes the apple has to bake in the oven for a half hour and there was absolutely no way I was waiting that long for my dessert.  So I came up with this quick and simple version of a baked apple! And holy s@#%, it’s delicious!

Makes 1 Serving           Prep Time: 5 min          Cooking Time: 1 min

Ingredients

  • 1 green apple (organic obviously)
  • 1 tbsp cinnamon
  • 1 tsp vanilla extract
  • 1 spoonful plain, full-fat greek yogurt
  • 1 spoonful almond butter (optional)
  • 2 tsp coconut flakes (optional)

Directions

  • Cut up the apple into small cubes and place into a bowl.  Throw 1/2 tbsp cinnamon and the vanilla on top and give it a good mix.
  • Next, put apple mixture in the microwave for about a minute and a half or until the apple is hot and fairly soft.
  • Sprinkle with remaining cinnamon and coconut flakes.  Serve with the greek yogurt and almond butter on the side.  YUM!!!

Paleo Apple Cinnamon Muffins

I found this recipe on one of my absolute favourite recipe sites, PaleOMG.  I have yet to make a recipe from this site that I didn’t like. Everything has been absolutely delicious and these muffins are no exception!

Ingredients

  1. 1 cup almond flour
  2. 3 tbsp coconut flour
  3. 1 tbsp cinnamon (or more if you like)
  4. 1/2 tsp baking soda
  5. 1/4 tsp salt
  6. 1 apple, cored and diced
  7. 3 eggs, whisked
  8. 1/4 cup coconut oil, melted
  9. 1 1/2 tbsp honey

Directions

  1. Preheat the oven to 350 degrees
  2. In a large bowl, add almond flour, coconut flour, cinnamon, baking soda and salt.  Mix it all together.
  3. Next, add your eggs, honey, oil, and diced apples to the bowl and mix well until completely combined.
  4. Place paper or silicon muffin liners into a muffin pan. Spoon batter into the little cups. Sprinkle a little bit of cinnamon on top of every muffin. Bake for approximately 25 minutes. YUM!!
