Chocolate Coconut Protein Pancakes

Wooooo pancakes baby!!! I haven’t made good ol’ protein pancakes for breakfast in forever so these little drops of heaven were long overdue. And not to mention they were absolutely amazing :) Double the recipe and you’ve got plenty leftover for 2nd breakfast :0 or breakfast the following morning. IMG_4729Makes one serving    Prep Time – 5 min     Cooking Time – 10-15min

Ingredients

  1. 1/4 cup rolled oats
  2. 1/4 cup chocolate protein powder (I used Dymatize Iso-100)
  3. 1/8 cup coconut flour
  4. 1/8 cup coconut flakes
  5. 1/2 tsp baking soda
  6. 1-2 tbsp almond milk
  7. 1/2 cup egg whites

Directions

  1. Mix all dry ingredients in a bowl. Add in the egg whites, almond milk and give it a good mix.
  2. Heat some coconut oil in a pan over medium low heat. Using a 1/4 cup scoop, pour batter into pan. Once bubbles start to form, flip over. When both sides are golden brown…boom! Done! Repeat for the rest of the batter :)

For “Berry Syrup” – defrost 1/2 cup frozen berries in the microwave. Mix in some stevia and serve over top of pancakes.

Shannon’s Oatmeal Pancakes

My lovely friends and family are such amazing cooks! I thought it would be nice for them to share their healthy recipes on Blondie and Pitbull as well :) So here is the first guest post from my amazingly fit sister, Shannon. She also happens to be a very talented runner and is just beginning training for a full marathon, so these oatmeal pancakes are the perfect post-run breakfast.

Ingredients

  • 1 1/2 cups rolled oats
  • 2 1/2 cup almond milk
  • 1 1/2 cup quinoa flour (can substitute any type of flour if you want)
  • 1/4 cup brown sugar (can also substitute honey if you want sugar-free)
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 2 large eggs
  • Cooking spray
  • 2 cups frozen wild blueberries
  • Maple syrup

Preparation

  • Soak oats in 1 cup of almond milk in a small bowl for 15 minutes.
  • Combine flour, brown sugar, baking soda, baking powder, salt, ground nutmeg, and ground cinnamon in a medium bowl.
  • Whisk eggs together with egg whites in a small bowl, and stir in remaining almond milk. Add this to the dry ingredients and stir.
  • Heat a nonstick skillet over medium-high heat and coat with cooking spray. Pour about 1/2 cup batter per pancake onto hot skillet, drop frozen blueberries onto batter puddle, and cook for about two minutes or until tops are covered with bubbles and edges look cooked. Flip and cook until bottoms are lightly browned.
  • Transfer to a plate; keep warm. Cook remaining batter in batches. Spoon maple syrup over pancakes; enjoy!

Coconut Pancakes w/ Blueberry Syrup

These were soooooooo good!! My own creation!

I didn’t measure the ingredients as I was making them, so this is just an approximation.  I also forgot to take a picture…oops! But this is what they looked like.

Ingredients:

  • 4 egg whites
  • 1/2 cup rolled oats
  • 1/2 coconut flour
  • 1/2 coconut flakes
  • 1 banana – mashed
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • 1 tsp vanilla
  • 1 tbsp unsweetened almond milk
  • Blueberries (fresh or frozen)

Mix all the ingredients in a bowl (minus the blueberries) until combined and the right consistency.  You may need to add more flour/oats if its too thin or more almond milk if its too thick.

Heat a pan to low-medium heat.  After spritzing the pan with olive oil, pour 2 tbsp batter onto the pan and top with a few blueberries.  Cook for a few minutes being careful not to burn it, then flip for a few more minutes until cooked through.

FOR THE BLUEBERRY SYRUP: Heat the blueberries in the microwave until warm and melty.  Add in a couple drops of stevia if you want the syrup sweeter :) pour over the pancakes like syrup! Enjoy!!

Protein Pancakes!

Got this recipe from my beautiful friend Amanda! Best trainer ever!

Ingredients:

  • spoonful of protein powder
  • 1/2 cup of egg whites
  • 2 tbsp quick oats (or regular oats)
  • 1 tsp ground flaxseed
  • 1 tsp cinnamon
  • 1/2 cup of blueberries (can be frozen or fresh)
  • 1 tbsp natural peanut butter
  • 1/2 a banana mashed up (optional)

Instructions:

  1. Mix first five ingredients together (and mashed up banana if you like)
  2. Pour mixture into a non-stick pan on medium heat
  3. Let cook for around 30 seconds then sprinkle blueberries on top
  4. Cover pan with lid and let cook about 2 minutes. When pancake is fluffy, flip it over.
  5. Let cook for another 2 minutes.  Check occasionally to make sure it isn’t burning. Its done when it rises back after being pressed with a spatula
  6. spread a layer of peanut butter over top and enjoy!

There’s lots of different things you can do with this recipe as well!  I defrosted frozen mixed berries and poured them on top, almost as a fruity syrup! Very delicious! You could also top with cut up banana as well.
