Portobello Mushroom Pizza

I can’t believe I’ve never made this before! It’s amazing!! Very low carb, low calorie and high protein! Not to mention it only took 20min to make :) and absolutely delicious!! Cheat clean my friends ;)

IMG_5427Makes 1 serving (2 mushrooms)       Prep Time – 5 min      Cooking Time – 15-20 min

Ingredients

  1. 2 portobello mushrooms
  2. 1 tsp olive oil
  3. 1/4 cup tomato pizza sauce
  4. 1/4 cup grated mozzarella cheese (or another type of cheese)
  5. Whatever toppings you like – chicken breast, veggies, salami, spinach, etc

Directions

  1. Preheat oven to 400 degrees.
  2. Wipe the mushrooms off with a paper towel, remove the stems and scrap out the gills with a spoon. Brush them with the olive oil and place on a baking sheet stem side up. Pop in the oven for around 12 minutes or until the mushrooms start to release some moisture and are soft.
  3. Remove from the oven, spread on your sauce, toppings and cheese. Pop back into the oven for around 6 minutes or until the cheese is melted.
  4. Holy crap that’s it! Enjoy :)

Cauliflower Pizza Crust

Amazing!  I’ve wanted to try making pizza crust with cauliflower for so long but just never got around to it or found a recipe that wasn’t stupidly complicated. Thank you Eating Bird Food for this great pizza crust recipe! I changed it up quite a bit and it tasted incredible! Great alternative to regular wheat crust.

Now that I’m back in school almost full time and spending lots of time working with Amanda at Krystalfit, I’m finding way less time to cook :(  Hopefully once my schedule gets settled on a regular routine I’ll get back to making myself new, delicious dinners and snacks more often! But for now, I’m guessing my meals are going to be much more simple…ugh!

This recipe takes a little bit more time to prepare but is well worth it!  Enjoy! :)

Makes 2 servings        Prep Time: 15-20 min       Cooking Time: 40 min

Ingredients

  1. 1/2 head of cauliflower
  2. 1/2 cup goat cheese mozzarella cheese
  3. 2 tsp italian seasoning
  4. 1 egg, beaten
  5. 1/3 cup brown rice flower
  6. 2 tbsp cornmeal (optional)
  7. your choice of pizza toppings

Directions

  1. Preheat oven to 375 degrees.
  2. Using a food processor, pulse up the cauliflower until it resembles rice.  Next, sauté the cauliflower rice in a pan over medium heat for about 8 minutes.
  3. Once the cauliflower is done, add it to a large bowl with the remaining crust ingredients and give it a good mix.
  4. Spread the dough out evenly on a greased baking sheet. It should be about 1/4 inch thick.
  5. Bake for approximately 25 minutes or until golden brown and crispy around the edges.
  6. Remove from the oven and cover with your favourite pizza toppings.
  7. Broil the pizza for another 5 minutes or until the toppings are hot and the cheese is melted.

Pizzadilla!

As per Amanda’s request haha here’s how I made my pizzadilla! If you didn’t get it from the name…it’s pizza in a quesadilla! I love pizza…it’s one of my absolute favs!  So any healthier variation of it, sign me up! It’s obviously not compeltely and totally healthy, but when you need something really quick, this is a good option.  Took me all of 10 min to make :)

I had leftover stir-fried veggies in the fridge so I just used those for the filling (that’s why it has broccoli in it lol) but you can basically use any toppings that you usually put on pizzas. I usually put mushrooms, spinach, peppers, onions, pineapple, etc. :)

So here’s what you’ll need:

  • whole grain or corn tortilla
  • tomato sauce
  • cheese – any kind will work (if you’re not so keen on regular cheese then goat cheese would be really good as well!)
  • sliced up chicken breast
  • veggies for pizza toppings

To assemble

  • Fold tortilla wrap in half just so it makes a crease so you know where to put the fillings
  • spread the sauce over half the tortilla, then put a really small sprinkling of cheese, then the chicken, then the veggies, then top with the remaining cheese
  • fold the other half of the tortilla over on top
  • in an ungreased pan on medium-low heat, grill the pizzadilla evenly on both sides so the insides are warm, the cheese is melty, and the outside is crispy
  • cut into four and serve with some extra tomato sauce for dipping

Yum! Quick and easy dinner!
